Noodles with Peanutbutter dressing


I got this recipe from one of Nigella Express cookbook. This cookbook is all about fast but delicious recipes. I made this for the first time when a friend came to visit for one night. We hadn't seen each other for few years and we had some catching up to do and I thought that this light but delicious all in one plate meal was the perfect thing to enjoy while chatting. The first time I added some chicken pieces, but I made it other times without it and it's just as delicious. The thing that I most like about is that all the vegg. are left uncooked, making the dish light and fresh in your mouth...plus it compensate for feeling guilty about the not-so-light dressing! ;)

Noodles with Peanut butter dressing
serves 8

For the salad
125gr. mangetout
150gr.beansprouts
1 red pepper deseeded and cut into strips
2 spring onions finely sliced (or chopped)
550gr. of ready prepared noodles (or 2 x 275gr. packets to cook)
cooked chicken pieces (optional)
20 gr.of sesame seeds
fresh coriander about 4 tablespoons

For the dressing

1 *tablespoon of sesame oil
1 tablespoon of garlic oil
1 tablespoon of soy sauce
2 tablespoons of sweet chilli sauce
100 gr. smooth peanut butter
2 tablespoon of lime juice

* 1 tablespoon =15 ml.

Directions:
Cook the noodle and when ready rinse them with cold water. In a small bowl mix all the dressing ingredients together.
Put the mangetout, beansprouts, red pepper strips, sliced onions, chicken(if using any) and the, now cold, noodles into a bowl and toss them around a bit. Pour over the dressing and mix well. Sprinkle the sesame seeds and chopped coriander, mix slightly and voila`, it's done!
